Fine smoked and air cured ham

Air-cured ham ("Lachsschinken") is a speciallity from our homeland Germany. The best part of pork from locally sourced meat is marinated for days in curing salt and a hint of garlic, dried and finally slightly smoked with smoke from Orange wood. Like Salmon is considered "royal" within the marine world, Salmon ham is certainly to be considered royal in the meat world, not only for it's pink colour.
